      Microbial evaluation of wild boar carcasses coming from control culling in the subalpine Prealpi Orobie area, northern Italy

          Abstract

          This study tested 32 carcasses of control-culled wild boars in a subalpine area of Northern Italy between May and November 2021, delivered to three approved game meat establishments. Carcasses and organs were submitted to the detection of Salmonella spp., Campylobacter spp., Listeria spp., and Listeria monocytogenes; carcass surfaces were also sampled for microbial counts [total viable count (TVC), Enterobacteriaceae, Escherichia coli, coagulase-positive Staphylococci]. Campylobacter spp. was detected with high prevalence (90.9%) in the caecum as well as Listeria spp. and L. monocytogenes (37.5% and 25%, respectively), whereas only one animal harbored Salmonella spp. (3.8%). A low contamination rate was detected on the carcasses for Campylobacter spp. and Listeria spp. High mean TVC, Enterobacteriaceae, and E. coli counts were detected on the carcasses (5.90, 4.83 and 2.54 Log CFU/cm 2, respectively). Animal sex and weight exerted a weak effect on bacterial counts; the same was observed for the culling/sampling interval. Moderately higher counts were detected in animals culled with high (>15°C) environmental temperatures. Animals shot in the abdomen showed higher counts for all the parameters except for S taphylococci, and an increasing count of enteric bacteria was observed when considering head/neck, shoulder, chest, and abdomen locations, respectively. A significant difference among the plants was observed, independently from the other factors, thus stressing the importance of the application of hygiene procedures in approved game meat establishments to limit carcass contamination.

          Salmonella serotypes in wild boars (Sus scrofa) hunted in northern Italy

          Background Salmonella species (spp.) are zoonotic enteric bacteria able to infect humans, livestock and wildlife. However, little is known about the prevalence and the presence of the different serovars in wildlife. Considering the wide distribution of wild boars and the feeding behaviour (omnivorous scavengers), wild boars may be a good indicator for environmental presence of Salmonella spp. The aims of this study were to determine the presence of Salmonella spp. in hunted wild boars and to determine the serotype the isolated strains. Findings Over three hunting seasons, the intestinal contents of 1,313 boars hunted in northern Italy were sampled and cultured. Salmonella spp. were isolated from 326 boars (24.82%). Thirty different serovars belonging to three different S. enterica spp. were found. Twenty-one serovars of S. enterica subsp. Enterica were found including the human pathogens S. Typhimurium and S. Enteritidis. In addition, nine serovars belonging to S.enterica subsp. diarizonae and S. enterica subsp. houtenae were detected. Conclusions Considering the widespread occurrence of wild boars in Europe, the epidemiological role of this species in relation to salmonellosis might be relevant and should be further investigated. Wild boars may act as healthy carriers of a wide range of Salmonella serotypes.

            The microbiological conditions of carcasses from large game animals in Italy.

            This study investigates the microbiological conditions of large game animal carcasses following evisceration. Carcasses of animals (N=291) hunted in the Upper Susa Valley (Italian Alps) were analysed for pH, Aerobic Viable Count (AVC), Enterobacteriaceae, Yersinia spp., Listeria monocytogenes and Salmonella spp. After shooting, evisceration occurred within 60 min in 90.7% of animals and sampling within 90 min in 88.3% of animals. Mean pH values (5.97: ruminants; 5.77: wild boar) were similar to those of regularly slaughtered domestic species. AVC values were highest in animals shot in the abdomen. Within species, AVC and Enterobacteriaceae values did not differ across different shooting-evisceration/sampling times. However, these counts exceeded 5 and 2.5 log, respectively, in 18% of wild boar and 39% of ruminants; the highest values were detected in wild boar. No pathogens were detected in any species. These results reveal inadequate hygiene in game meat handling/harvesting, implicating the need for improved practices. Copyright © 2012 Elsevier Ltd. All rights reserved.

              Prevalence of Shiga toxin-producing Escherichia coli, Salmonella spp. and Campylobacter spp. in large game animals intended for consumption: relationship with management practices and livestock influence.

              Although wild ruminants have been identified as reservoirs of Shiga-toxin producing Escherichia coli (STEC), little information is available concerning the role of Salmonella spp. and Campylobacter spp. in large game species. We evaluated the presence of these pathogens in faeces (N=574) and carcasses (N=585) sampled from red deer (N=295), wild boar (N=333) and other ungulates (fallow deer, mouflon) (N=9). Animal sampling was done in situ from 33 hunting estates during two hunting seasons. Salmonella spp. and Campylobacter spp. strains associated with human campylobacteriosis were infrequently detected indicating that both pathogens had a limited zoonotic risk in our study area. The overall STEC prevalence in animals was 21% (134/637), being significantly higher in faeces from red deer (90 out of 264). A total of 58 isolates were serotyped. Serotypes O146:H- and O27:H30 were the most frequent in red deer and the majority of isolates from red deer and wild boar were from serotypes previously found in STEC strains associated with human infection, including the serotype O157:H7. The STEC prevalence in red deer faeces was significantly higher with the presence of livestock (p<0, 01) where high densities of red deer (p<0.001) were present. To the best of our knowledge, this is the first study reporting the occurrence of Salmonella spp. and STEC in carcasses of large game animals. Furthermore, this study confirmed by pulsed-field gel electrophoresis (PFGE) that cross contamination of STEC during carcass dressing occurred, implying the likelihood of these pathogens entering into the food chain.
